La actividad en el Rastro Municipal se ha regularizado tras concluir el periodo de cuaresma. Las labores de sacrificio habían disminuido hasta 20 por ciento por los días santos en donde miles de zamoranos acostumbran a no consumir carne roja para no ir en contra de sus creencias religiosas.
“Actualmente procesamos un promedio de 33 reses y 120 cerdos en forma diaria tras pasar el periodo de abstinencia. Vendrá una demanda importante para las carnicerías locales que han comenzado a resurtirse nuevamente de los productos para dar respuesta a la demanda de los consumidores”, puntualizó Alejandro Fuentes Tejeda, administrador del rastro municipal.
Comentó que otro punto del que estarán al pendiente durante la temporada de calor es la sanidad del ganado que llega para el sacrificio, ya que es común que se presenten esos cuadros entre la población, debido al consumo de productos que ingieren y que se encuentran contaminados.
“Pueden tener la seguridad de que la carne que sale del Rastro Municipal va con todas las medidas sanitarias posibles, ya que incluso los métodos de sacrificio han sido modificados porque los hacemos en forma aérea para evitar que el animal tenga contacto con el piso y que la carne se pueda llenar de bacterias”, dijo.
Mencionó que en el momento en que se detecte un animal enfermo procederán al sacrificio de manera inmediata, pero aseguró que tiene más de un año que no se presenta un caso de ese tipo, ya que los ganaderos también han puesto empeño en que los procesos de engorda y cuidado de sus animales sean efectuados con calidad.
Agregó que un signo de garantía en la carne ofertada en las tablajerías de los mercados municipales es que cuentan con el sello respectivo de salubridad y diariamente son enviadas en vehículos con que cuenta el Rastro Municipal, por lo que no deben tener alguna duda sobre su procedencia para el consumo.
